Why We Love Marmalade

Marmalade has a fascinating history. One that began in Ancient Greece where cooked quince and honey proved to be a perfect way to “set” the treat. The Greeks later shared their discovery with The Romans.  For much of the next several centuries quince was the norm until a 1677 recipe book by Englishwoman Eliza Cholmondeley started using oranges.  From there it evolved to what we know marmalade to be today.

 

South Asia heavily influenced England’s marmalade evolution through exporting all sorts of bitter citrus varieties.  From that point England perfected their version of marmalade with strict recipes but they only used it as component to savory dishes in the evening.  It was the Scots who added more water making it spreadable for breakfast food like toast.
